Salt marsh lamb is naturally reared with love

Salt marsh lamb is deliciously sweet and tender – and that’s because they graze on nutritious sea salt samphire, grasses and marsh herbs. Suppliers to Holmes Mill Food Hall, Stuart and Caroline Lawson graze their lambs on the marshes at Cockerham where their family has farmed for over 100 years. With the sea covering the marsh at high tide for seven days a month, the lambs are returned to graze on the rich and nutritious marshland. Salt marsh lamb is recognised as a delicacy in Europe especially in the Normandy region of France where it is known as ‘pre sale’. It is now becoming increasingly popular here in England.
